4 Breakfast Ideas

Breakfast used to always be a meal that I'd skip. I'd normally wait and then eat much more later in the day. But now, I love eating breakfast, it definitely sets me up for the day. Although, most mornings I still struggle to decide what I fancy to eat. I thought I'd share some ideas what I have for breakfast, either recipes I've made up or recipes I've seen elsewhere.

Baked Oats

I first saw this on @pengporridge instagram page. You have to check out this page on insta, there are sooo many incredible looking recipes. I need to try some more :)

The recipe I use for these is:

  • 50g porridge oats

  • 25g protein powder (I used MyProtein chocolate or white chocolate)

  • 150ml milk (of your choice)

  • 1 teaspoon baking powder

Pop it in the oven for 15 mins on 180°C (until baked on top but still soft / cake like in the middle). Once it's done, top it with whatever you fancy!

For white chocolate oats, I top it with jam and white chocolate chips.

For chocolate oats, I top with Sweet Freedom syrup/sauce and chocolate chips.

Smoothie

This is a recipe that I found by experimenting. I add protein powder to this smoothie to keep me fuller for longer. I've always liked smoothies as I feel it's a good and easy way to get in some fruit and veggies :)

The recipe I use for the smoothie is:

  • 200ml almond milk (or milk of your choice)

  • 25g chocolate protein powder

  • 60g cooked beetroot

  • 80g frozen berries

  • 1 banana

  • 1 tablespoon peanut butter

Put all of the ingredients into a blender / smoothie maker and blitz it all up.

Apple Pie Oats

I got this recipe from one of my favourite cook books: Run Fast, Cook Fast, Eat Slow. I absolutely love apple pie, can you imagine how excited I was when I saw this recipe?! It's really easy to make and so tasty. I do slightly amend the recipe, depending on which nuts I've got in the house, but I found a few work with this recipe.

  • 40g porridge oats

  • 250ml water (more or less, depending on the consistency that you like)

  • 2 tablespoons maple syrup

  • 25g pecan nuts (I've used walnuts or cashews too)

  • 1 Granny Smith apple

  • Half a teaspoon of ground cinnamon (more or less, depending how much you like cinnamon)

Add the oats to a saucepan with the water and less that boil away. Meanwhile, chop up the apple and nuts, then add to a frying pan. Then add the maple syrup and cinnamon to the apple and nuts. Once the oats are done, take off the heat and stir in half of the apple mixture.

Pour into a bowl and then add the remaining apple mixture on top :)

Protein Pancakes

This is another recipe that I made up by experimenting. I absolutely love pancakes but I'm not always the best at making them (the first one always seems to go wrong for me!!! I think I need practice).

  • 1 beaten egg

  • 25g protein powder (I either use MyProtein white chocolate or chocolate)

  • 1 teaspoon baking powder

  • 1 mashed banana

Mix it all together in a bowl. Add some oil to a frying pan, once heated, pour in half of the mixture. Flip once cooked on one side. The recipe makes two pancakes :)

Top with whatever you fancy! I normally add greek yoghurt, jam and chocolate chips.
